Lunch at work is always a problem. I have only 25 minutes, a microwave, and a toaster oven. The old go-to is a Lean Cuisine, but I'm trying to break that habit. Lean Cuisines are pricy and undoubtedly loaded with preservatives. Plus, I often opt for the pepperoni pizzas, which certainly don't pack much of a nutritious punch.
My new discovery this week is asparagus mini-pizzas. I take an Arnold Whole Wheat Sandwich Thin, drizzle it with olive oil, and sprinkle on a bit of of pizza seasoning. Then I add a little shredded cheese and some cut asparagus. (To save time I cook a steam-in-microwave bag or fresh spears Sunday night, then divide it into little tupperware containers for the week.) Throw it in the toaster oven for a few minutes, and you're done! A simple, tasty lunch with whole grains,vitamin K, and folate instead of a sterile frozen meal.
